Put this on your next beach playlist!
Country newcomers, The Zac Brown Band, have been quietly gaining popularity with their laid-back front porch rocking songs. Their newest, called Toes, should be the song of the summer. It's got it all: "bikinis and palm trees," "toes in the water, ass in the sand," "beer in my hand" and some tropical island Spanglish thrown in for good measure. Too bad it didn't come out until the end of July!
The video (linked above) is pretty bizarre. Maybe the thugs are after him because he's wear shorty short cut-off jean shorts, not because of his new-found wealth...

DRINK: Beerquila
Don't judge, just try this at your next summer party...if you're over 21, of course. Otherwise just stick to your sippy-cup and fruit punch.
In a punch bowl or empty (clean) cooler, mix 1 part tequila, 1 part lemon juice (straight up), and 2 parts beer. Serve over ice but don't add it to the mix or it will water it down.
Your friends will ask what it is called and I've heard many names for this concoction, including Beerquila, The Bull, and Kirby Fucket (?) so feel free to make up your own since no one seems to really know anyway.

RECIPE: Blue Cheese Burgers
Tired of the same ol' same ol' summer grill out? Try this twist on the backyard burger!
ingredients:
-lean ground beef
-blue cheese, crumbled
-minced chives
-Worcestershire sauce
-ground black pepper
-salt
1. In a large bowl combine the ground beef, 4 ounces of blue cheese, 1/2 cup of minced fresh chives, 1 teaspoon of Worcestershire sauce, 1 teaspoon of coarsely ground black pepper, and 1 1/2 teaspoons of salt.
2. Cover and refrigerate for 2 hours before grilling.
3. Form into patties and grill to your liking.

RECIPE: Strawberry Spinach Summer Salad
I am convinced this is the perfect summer salad. A friend made this at a recent cook-out and I devoured it. And of course when back for seconds. I don't know if I've ever done that with a leafy salad before!
ingredients:
-spinach leaves
-strawberries
-1 avocado
-1/2 cup walnuts
-1/2 cup feta cheese
-poppy seed dressing
what to do:
1 - Cut the strawberries in quarters, slice the avocado into dice-sized cubes, and crush the walnuts if they aren't already bite-sized.
2 - It's a salad: mix it all together! C'mon now!

RECIPE: Raspberry Topping Sauce
This is a perfect addition for any hot summer day ice cream retreat. Try serving the ice cream in a cantaloupe if it's vanilla.
ingredients:
-fresh or frozen raspberries
-2 table spoons of red currant jelly
-2 teaspoons of cornstarch
what to do:
1 - with a spoon, push the raspberries through some sort of a sieve to remove the seeds and juice the berries
2 - stir in the jelly and cornstrach
3 - heat mixture to boiling in a saucepan while stirring contantly (boil for 1 minute)
4 - cool and serve at room temperature

MUSIC: Buenos Dias San Juan
Every week the good people at iTunes "give away" a few songs for free out of the goodness of their hearts (or new age version of payola). Most of the time the selections of mediocre but when it's free, it's free; the "beggars can't be choosers" adage rings true.
Once in awhile a gem pops up though. This week's Spanish-language "Cansión de la Semana" is such a tune. The group, called Domino Saints, is from Puerto Rico and the song, "Buenos Dias San Juan" is off their eponymous album. It's funky and you don't need to know any of the Español to feel the groove. It's free and worth it until Tuesday...and then it will just be worth it.

RECIPE: Mango Chicken Stir-Fry
A nice light fruity satisfying almost-summer meal for today!
Ingredients (serves 3-4):
1 mango
1 large red pepper
1-2 onions
3-4 large carrots
2 chicken breasts
pepper
salt
olive oil
soy sauce
orange juice
honey
What To Do:
1. cut the red pepper, onions, carrots, and chicken into thin strips (well, onions not so much but don't mince them)
2. in a stir fry pan, cook the veggies with some olive oil and soy sauce on medium heat (season to taste with pepper and salt)
3. season chicken strips with pepper
4. cook chicken in a separate pan with a splash of olive oil and drizzling of honey
5. once veggies are softening, cut the mango into strips and add to the mix, turning the heat to low
6. when chicken is cooked, add it and a splash of orange juice (1/2 cup) to the stir fry pan
7. mix well and serve!
